Ingredients For wild rice soup

1/3 cuncooked wild rice

1 Tbspvegetable oil

1 qtwater

1 mdonion, chopped

1celery rib, finely chopped

1 mdcarrot, finely chopped

1/2 cbutter
-
1/2 call purpose flour

3 cchicken broth
-
2 chalf and half cream
-
1/2 tspdried rosemary, crushed

1 tspsalt
How To Make wild rice soup

1In a medium saucepan, combine the rice, oil and water; bring to a boil. Reduce heat; cover and simmer for 30 minutes.

2Meanwhile, in a Dutch over cook the onion, celery and carrot in butter until vegetables are almost tender.

3Stir in flour until blended.

4Gradually add the broth; stir in undrained rice. Brig to a boil; cook and stir for 2 minutes or until slightly thickened.

5Reduce heat; stir in cream, rosemary, and salt. Simmer, uncovered, for about 20 minutes or until rice is tender.
