Found this in a book I was reading and couldn't believe how easy it was. Not only was it easy, it was the best tomato soup I ever had. Enjoy~

Ingredients For tomato soup

3 lbtomatoes, peeled, seeded and chopped with their juices

1 mdonion, coarsely chopped

2 Tbspolive oil
-
3/4 tspsalt

1/4 tsppepper
- YOU CAN SUBSTITUTE FRESH TOMATOES WIHT 2 28 OUNCE CANS OF CHOPPED TOMATOES WITH THE JUICES
How To Make tomato soup

1You can grill or roast the tomatoes, which I recommend, to add a smoky flavor. Heat large sauce pan on med-high heat, add olive oil and onion and cook onions until tender, but not browned, 5-10 minutes.

2Add chopped tomatoes, stir and reduce to simmer. Simmer until the tomatoes are covered in their own liquid, about 25 minutes. Remove from heat and puree soup in batches. A blender works best.

3Return soup to pan, add salt and pepper, stir, heat through and serve. Enjoy~
