Ingredients For gazpacho (salad soup)

2garlic cloves

3 cvegetable stock, condensed

2 Tbspwine vinegar

1/4 cpimento, chopped

1/4 conions, chopped

2 lbtomatoes

1/4 colive oil

1/2 cwater

1/2green bell pepper

1cucumber, sliced

2 slicebread, white

1/2 cherbs of choice
How To Make gazpacho (salad soup)

1Crush garlic in bowl and add bread which has been torn into small pieces; this helps give the soup consistency.

2Add sliced cucumber, diced green pepper, water and olive oil; allow to marinate for several hours.

3Add cut-up tomatoes, onions, pimiento and salt to chilled mixture.

4Blend in blender or food processor until the texture you prefer; chill thoroughly.

5Just before serving, mix in vinegar, cold stock and herbs.

6For added color, flavor and texture, garnish with garlic croutons, watercress or lime slices.

7NOTE: Use low-sodium chicken stock or broth if vegetable stock is not available.

8NOTE: For herbs, use your choice of chives, parsley, basil, or tarragon - All ingredients should be as fresh as possible.
