I was asked to create a cheesy Cauliflower soup for Debbie Loftin... Here is my version.....

Ingredients For fireman bob's creamy cheesy cauliflower soup

  • 1 stalk
    butter
  • 1 c
    chopped onion
  • 1/2 tsp
    cayenne pepper
  • 1 tsp
    course sea salt - or to taste
  • 1 tsp
    black pepper - or to taste
  • 1 tsp
    carroway seeds - crushed
  • 1 lg
    head cauliflower, roughly chopped
  • 4 c
    chicken broth _ homemade or store bought
  • 1/2 c
    heavy cream
  • 1 1/2 c
    cheddar - grated - or more to your taste
  • 1 tsp
    smoked paprika

How To Make fireman bob's creamy cheesy cauliflower soup

    In a large Dutch Oven, melt the butter, add onion, salt and saute over low heat until tender about 8 minutes. Add cauliflower and continue cooking 6 additional minutes stirring continually.

    Add broth, paprika, cayenne pepper, and cream to pan and bring to boil. Reduce heat to low and simmer, covered, for 2 hours.

    Remove from heat, puree soup in a blender in batches. Return to pan over low heat.

    Whisk in cheese and continue stirring just until melted.
