This is a favorite of my family. Quick, easy and only a few ingredients. We serve it with cornbread and it is the perfect evening meal on a cold, wintry night. Hope you enjoy.

Ingredients For cheesy hashbrown soup

  • 2 can
    chicken broth
  • 1 lg
    frozen hashbrowns, shredded
  • 1 lg
    velvetta cheese, cubed
  • 1 qt
    milk

How To Make cheesy hashbrown soup

  • 1
    Pour cans of chicken broth into dutch oven. Bring to a boil and add frozen hasbrowns. Cook til hasbrowns are tender. Add cubed cheese (I use about 1/2 of the large box of Velveeta). Stir until melted. Add milk - make it as cheesy or as milk-like as you want. Pepper to taste and serve while steaming hot. My family likes it served with cornbread but crackers are good also.
