I love potato soup and this one is delicious made with low fat Velveeta and crispy bacon. If you want it to be a bit healthier, you could make it with turkey bacon. Each 1 cup serving is 4 Points Plus

Ingredients For weight watcher's potato soup

  • 32 oz
    chicken broth, non-fat
  • 3 lb
    potatoes, diced
  • 8 oz
    reduced fat velveeta cheese
  • 4 slice
    bacon, cooked crisp
  • 1/4 c
    fat free sour cream
  • 1/2 md
    onion, diced
  • 3 Tbsp
    water
  • 2 Tbsp
    flour

How To Make weight watcher's potato soup

    Combine broth and potatoes. Cover and cook 20 minutes or until potatoes are done.

    While potatoes are cooking saute onions. Add to mixture.

    Cook bacon until crisp. Cool on paper towel and once cooled break into pieces.

    Stir in cheese and sour cream. Simmer until cheese melts.

    Thicken with flour and water mixture. Add crumbled bacon before serving.
