    carrots, scraped and finely chopped
  • 1/2 c
    celery, finely chopped
  • 1/3 c
    onion, finely chopped
  • 1/4 c
    butter, melted
  • 1/3 c
    all-purpose flour
  • 2 c
    chicken broth
  • 2 c
    milk
  • 1 c
    cheddar cheese, grated
  • 1 Tbsp
    brandy
  • 1/4 tsp
    salt

How To Make golden gate cheese soup

    Saute carrot, celery, and onion in butter in a large saucepan for 5 minutes or until the vegetables are tender.

    Add the flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add the chicken broth and milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.

    Stir in the shredded cheese, brandy, and salt. Reduce heat to low, and cook, stirring constantly, until the cheese melts. Serve immediately.
