I love corn chowder. It's not everybody's cup of tea so to speak, but if it is---THIS IS IT!

Ingredients For maine corn chowder

  • 2 slice
    salt pork or bacon
  • 1 small
    onion, diced
  • 2 c
    diced raw potatoes
  • 2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 c
    water
  • 1 can
    cream style corn
  • 1 qt
    milk (i usually add 1 can evaporated milk to the milk to make a quart)
  • 1
    piece of butter

How To Make maine corn chowder

    In a large kettle,cook salt pork or bacon slowly until fat is rendered. Remove.

    Add onion and slowly cook until onion is yellowed.

    Add water, diced raw potato, salt and pepper. Cover and bring to a steaming point. Lower heat and cook until potato is tender, about 15 minutes.

    Add corn and the milk. Taste for seasoning, add a piece of butter and reheat slowly--do not boil. Allow chowder to ripen for an hour to develop flavor.
