This is a large stew pot size recipe, but it freezes well, so I always make the large batch. I added my own touch to the original family recipe...we like the thicker consistency.

Ingredients For corn chowder

  • 1/2 c
    celery, chopped
  • 1 c
    butter
  • 1 sm
    onion, diced
  • 10 md
    potatoes, diced small
  • 1/4 c
    chicken base
  • 10 c
    milk
  • 4# can
    creamed corn
  • 3# can
    whole corn
  • parsley or parsley flakes

How To Make corn chowder

  • 1
    Saute' onions, potatoes and celery in butter till tender. Add remaining ingredients and heat till hot and thickened to consistency of potato soup. NOTE: I add 3 cups of instant potatoes (more if desired)- ONE CUP AT A TIME, SLOWLY, stirring well and waiting in between to judge thickness. Season with salt and pepper, if desired, to taste.
