Being from the Midwest and having lived in MN, wild rice is a big deal. This is a GREAT soup recipe, tried and true! Best I'VE ever tasted, let me know what YOU think.

Ingredients For wild rice and chicken soup

1/4 cbutter, cold

4celery ribs

2carrots peeled and diced

1 smwhite onion diced

1 smred onion diced

1/2 cgreen onions sliced

1 Tbspfresh dill weed

2 tspblack pepper

2 tspgarlic salt

2bayleaves
-
1/2 tsptumeric

4 qtchicken broth
-
1 1/2 cwild rice
-
1/2 cwhite rice
-
1/2 tspsalt
-
4egg yolks
-
2 ccooked chicken diced
-
3 csliced mushrooms
How To Make wild rice and chicken soup

1Melt butter over medium heat. Add first 5 ingredients, sauté until slightly tender. 5 minutes. Add next 5 ingredients.

2Meanwhile, in a large pot, combine broth, rice and salt. Bring to boil. Reduce heat and add celery mixture. Cover and simmer 30 minutes. Add more stock if too thick. Place egg yolks in small bowl, whisk in 1 cup hot soup, then whisk mixture back into soup. Add chicken and mushrooms. Discard bay leaves. Heat gently; do not boil.
