I wanted something different from a regular chicken soup and I came up with this recipe after having something similar at a local restaurant. This is one of our family's favorites.

Ingredients For mexican chicken soup

  • 3
    chicken breasts
  • 1 md
    onion
  • 2 can
    chicken broth
  • 2 Tbsp
    butter, unsalted
  • 1 Tbsp
    cumin
  • 1 tsp
    cilantro, dried
  • 1 tsp
    oregano, dried
  • 1 can
    diced tomatoes with garlic
  • 2 clove
    garlic
  • 2 Tbsp
    tomato paste, italian
  • 1 can
    chopped green chiles
  • 1/2 tsp
    chile powder

How To Make mexican chicken soup

    Boil chicken breasts in water til done. Cool and remove meat. Strain broth and reserve.

    Chop onion and mince garlic. Saute onion and garlic in butter, over low heat, til soft. Add cumin; stir. Add reserved and canned chicken broth. Add tomatoes, paste, chilies, oregano,chile powder and cilantro. Stir well to melt the paste. Cut chicken into bite size pieces and add to soup. Cook over low heat for 1 hour.
