Ingredients For lelli's minestrone soup

  • 3/4 c
    chopped onion
  • 2 Tbsp
    butter
  • 2 can
    16 oz cans mixed vegetables (drained)
  • 1-32oz can
    chicken broth
  • 2- 15oz can
    cannelini beans (drained) may sub great northen beans
  • 1- 14oz can
    crushed tomatoes
  • 1-8oz box
    frozen spinach
  • 1-6oz can
    tomato paste
  • 1 tsp
    garlic powder
  • 1 tsp
    dried parsley
  • 1/2 tsp
    pepper
  • 1 tsp
    salt
  • 1/2 tsp
    basil
  • 1/3 c
    macaroni, elbow
  • 1/4 c
    parmesan cheese
  • 1 c
    half and half

How To Make lelli's minestrone soup

  • 1
    saute onion in margarine
  • 2
    add the above ingredients and simmer for 1 1/2 hours
  • 3
    process at least half of the soup in a blender. or use a stick blender
  • 4
    add 1/3 cup macaroni, 1/4 cup parmesan cheese and 1 cup half and half
  • 5
    cook for at least 20 minutes more
  • 6
    serve with crusty bread and additional parmesan cheese
