Ingredients For sante fe soup

  • 1 lb
    ground beef, browned
  • 1 md
    onion, chopped
  • 1 can
    corn (or 1 cup fresh corn)
  • 2 can
    rotella tomatoes (here you can spice up by using mild-spicy tomatos)
  • 1/2 pkg
    large box of velveta cheese
  • 1/2 - 1 c
    green peppers (optional)
  • 2-3 clove
    garlic
  • sour cream
  • tostidos

How To Make sante fe soup

  • 1
    Brown the onions and ground beef. If you have excessive grease you may drain.
  • 2
    Add the remaining ingredients and cook on low for approximately 20 minutes. (I find that the cheese melts better if sliced into several smaller pieces.)

    Serve over crushed tostidos and add dollop of sour cream in the center. Enjoy!

    OPTIONAL ADDITIONS: -Add red pepper (Cheyenne)for more heat. -Purchase the zesty velveta blend versus original. -Substitute 1 can of mexican tomatos for 1 can of rotella.
