September is National Childhood Cancer Awareness Month, October is National Breast Cancer Awareness Month, plus so many more tributes in the calendar months to raise awareness for all of the different types of cancers. To the hero who is fighting the battle, may they find comfort in this high-protein soup that will comfort them and warm their soul. Protein is so very important to patients undergoing chemo-therapy. This soup is made with Edamame (soybeans) which contains 9g of protein in a half of cup serving. I cannot begin to explain just how delicious this soup is!

Ingredients For survivor soup

  • 1 tsp
    olive oil
  • 1
    medium onion, finely chopped
  • 1
    potato, peeled and cut into small cubes
  • 1 1/2 lb
    frozen edamame beans (defrosted)
  • 1 qt
    chicken stock (for vegan use vegtable stock)
  • pinch
    salt and pepper to taste if desired

How To Make survivor soup

  • 1
    Saute onion and potato in olive oil in a pan over medium heat stirring frequently. Cover and turn down to a simmer for about 5 minutes, until tender. Watch it does not stick or burn.

    In a stock pot, pour in chicken stock (or veg. stock) along with sauteed items and Edamame beans. Bring to a boil, stirring frequently. Cover with lid, reduce heat to a simmer and cook 15 to 20 minutes until beans are tender.

    Puree soup in a blender or with a hand blender. This soup can be served hot or cold. You will love the calming color as well as the taste and texture of this wonderful soup!
