Chana Dahl : magic beans are a staple in the Indian diet & are becoming more popular in the American diet. The original is an early grandparent of the modern garbanzo or chick pea. Its glycemic index is 8, which mean it has a slow effect on raising blood sugar. ½ cup beans = 134 calories, 22.5 gms carbohydrates, 2.9 gm fiber, 7.3 gms protein, 2.3 gms fat.

Ingredients For chana dahl soup - diabetic

  • 2 1/4 c
    chana dahl beans
  • 8 c
    stock or water - your choice
  • 1 c
    onion - chopped
  • 2
    celery stalks- chopped
  • 1 to 2 c
    lean ham or turkey or ham hock
  • 1/4 tsp
    pepper

How To Make chana dahl soup - diabetic

    Heat all ingredients to boiling in a 4 quart dutch oven, stirring occasionally, reduce heat. Cover and simmer 1 hour to 1 ½ hours. Remove ham, let cool enough to handle cut into pieces & return to soup. Heat again to boiling. Simmer 30 minutes or until soup is desired consistency.

    Optional Seasonings: Garlic pepper, lemon pepper, cayenne pepper, chili’s, minced garlic or 1 packet of Goya Ham seasoning. (has a pig on the box)
