Ingredients For black-eyed pea sausage stew

  • 1 pkg
    16 oz. smoked sausage links, halved lengthwise and sliced
  • 1 sm
    onion, chopped
  • 2 can
    15 oz. black-eyed peas, rinsed and drained
  • 1 can
    diced tomatoes, drained
  • 1 can
    tomato sauce
  • 1 c
    beef broth
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    cajun seasoning
  • 1/4 tsp
    pepper
  • 1/8 tsp
    salt
  • 1/8 tsp
    cayenne pepper
  • 1/8 tsp
    hot pepper sauce
  • 1-1/2 c
    frozen corn, thawed

How To Make black-eyed pea sausage stew

    In large skillet, cook sausage and onion over medium heat until meat is lightly browned; drain.

    Stir in the peas, tomatoes, tomato sauce, broth and seasonings. Cook and stir for 10-12 minutes or until hot and bubbly.

    Stir in the corn; cook 5 minutes longer or until heated through.
