We love most beans around here.Salt pork i grew-up with from the south this is the best of both for me. I can run to the basement for a jar anytime for a quick supper.

Ingredients For beans/salt pork in tomatoe sauce soup

2 lbnavy beans wash & sort

3 qtcold water
-
3 ctomatoe juice
-
1-6 ozcan tomatoe paste

1/2 conion chopped
-
1/2 cgreen bell pepper chopped

1 Tbspworcestershire sauce
-
1 Tbspsugar
-
few drops of hot sauce

1/4 lbsalt pork,cut in small pieces,remove rind

1Rinse beans in a large kettle place beans & 3 qts. water bring to a boil :simmer 2 mins.remove from heat cover let stand 1 hr.

2In a large pot combine tomatoe juice,paste,onion,green pepper,worcestershire sauce,sugar& hot sauce.Cover bring to a boil reduce heat simmer 10 mins.

3Drain beans add salt pork and the sauce mix well pack hot mixture into hot jars 3/4 inch head space process 10 lbs. pressure. Pint for 80 mins. quarts 100 mins.
