Ingredients For bean soup with sausage meatballs

  • 1 Tbsp
    olive oil, extra virgin
  • 1 lb
    poultry sausage (i like hot but can use mild), removed from casing, rolled into 1 inch balls
  • 4 clove
    minced garlic
  • 1/2 c
    brown rice
  • 1
    head escarole (about a pound)
  • 32 oz
    chicken stock
  • 3 can
    (15oz each) cannellini beans, drained

How To Make bean soup with sausage meatballs

  • 1
    Heat oil in soup pot over MEDIUM, add sausage balls and sear all around (5 minutes)

    Add garlic, rice and escarole....stir, cover and let steam about 5 minutes
  • 3
    Raise the heat to HIGH, add the stock and bring to a boil...reduce to MEDIUM-LOW and simmer (covered) about 15 minutes (until sausage is cooked through and rice is tender)

    Add the cannellini beans and stir, salt and pepper to taste....simmer 5 more minutes until soup is heated through
  • 5
    Serve with some fresh grated romano cheese
