My husband and I love the combination of tomatoes and beans with ground beef added to the mix. My husband likes me to make a cornbread when I make this soup. We are both soup lovers.

Ingredients For bean & beef vegetable soup

1 lblean ground beef

2 canred kidney beans
-
1 canwhite beans
-
2 cwhole kernel frozen corn
-
1 lgonion, diced

1 Tbspminced garlic
-
1 1/2 cfresh or canned rotel tomatoes

1/4 ctomato paste
-
3 qtwater (adjust to your taste, may use some broth)

salt & pepper to taste

1 1/2 cuncooked shell macroni
How To Make bean & beef vegetable soup

1In a large pot brown ground beef just until it is no longer pink. Add onion and garlic; cook until the vegetables are a little tender - 2 to 3 min.

2Add your tomatoes, tomato paste, and water. Stir and let it come to a slow boil.

3Add beans, corn and seasoning. Stir on slow boil until the tomato paste has dissolved. Lower heat just so the soup is slightly bubbling. Cook for 45 min. Add macroni continue cooking for 45 mins.
