Sophisticated Snowball Cupcakes


Remember eating Hostess Snowballs as a child?

I always liked the look, but never liked the thick
marshmallow layer.  We would just pull the marshmallow
off and eat the cake.  With this version, you won't be pulling
the marshmallow off!


Here's a more sophisticated version using a marshmallow
frosting.  This recipe is easy yet showy, perfect
for guests.


I have had this half sphere silicone mold for years,
especially to make little cakes like this.  You can
find them on the internet here or you could just
use muffin cups and round them out with your frosting.

Be sure to spray your silicone molds with baking spray.
The last batch I put in the oven, I didn't spray and they
did not come out!


Snowball Cupcake Recipe

Chocolate Cake
(I halved one of my favorite dense chocolate cake recipes
for this and it made 10 cakes.)

3/4 C. all purpose flour
1/2 C. sugar
3/4 tsp. baking powder
1/2 tsp. baking soda
3 T. cocoa powder
1/4 tsp. salt
Mix the above together in a medium sized bowl with a whisk.

In a small bowl mix together:
1/2 C. water
1 tsp. vanilla flavoring
1 tsp. almond flavoring
1/2 C. real mayonaise

Stir the two together with a whisk until there are no lumps.

Spray your molds with baking spray (like Pam with flour)
and fill them about 1/2 full.  

Place silicone mold on a baking sheet.  Place in a preheated 350
degree oven.  This is a moist, dense cake so it will take some time
to bake.  My molds are 2 3/4 inches across by 1 1/4 inches deep.
I baked mine for 27 minutes or until a toothpick came out clean
and the center bounced back.

Let cool 10 minutes and then invert onto a cooling rack.


When cool, frost with the marshmallow frosting.

Marshmallow Buttercream Frosting

8 oz. marshmallow cream
3/4 C. soft butter
1 tsp. clear vanilla
1 tsp. almond flavoring
1/2 C. powdered sugar

In a large bowl with a whisk attachment mix the above
until fluffy.



Then press shredded sweetened coconut on all
sides of the snowball.



Dig in and enjoy!
