This is a Christmas candy I've been making for several years now! But, peanut brittle is good anytime of the year! I've had people approach me, and ask me to make it and sell it to them. It's so easy to make, and tasty too!

Ingredients For easy peanut brittle

  • 1 1/2 c
    dry roasted peanuts (you must use dry roasted peanuts)
  • 1 c
    sugar
  • 1/2 c
    light corn syrup
  • 1 pinch
    salt, optional
  • 1 Tbsp
    butter
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking soda

How To Make easy peanut brittle

    Grease a baking sheet and set aside (I chill mine in the refridgerator). In a glass bowl, combine peanuts, sugar, corn syrup and salt until well mixed. Heat in microwave for 6 or 7 minutes on high until mixture is bubbly and peanuts are browned. Stir in butter and vanilla; cook for 2-3 minutes longer. Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool for 15 minutes or until set (I put mine in the refridgerator). Break into pieces and store in an airtight container.
