How To Make zucchini cakes

1Heat 1/2-inch oil in skillet. Mix zucchini, cheese, parsley, garlic, egg, salt and pepper; stir in baking mix. Drop by rounded tablespoonfuls into the oil. Fry until golden brown, about 1 minute on each side. Makes about 2 dozen.
