surprise spinach casserole

I like to make this for the holidays instead of creamed spinach. The surprise is how quick and delicious it is.

Ingredients For surprise spinach casserole

  • 1
    3 oz pkg reduced-fat cream cheese, softened
  • 1/2 stick
    butter, softened
  • 1/4 tsp
    each salt and pepper
  • 2
    10 oz pkgs frozen spinach, thawed, squeezed dry
  • 1/4 c
    grated parmesan cheese
  • 1/4 c
    chopped pecans

How To Make surprise spinach casserole

  • 1
    Heat oven to 350. Spray a 1-12/-quart casserole dish w/ cooking spray. In lg bowl, combine cream cheese, butter, salt and pepper. Mix well.

    Stir in spinach. Spoon into casserole dish. Sprinkle w/ grated cheese and then pecans. Bake 30 mins, or until top is golden.
