We always have a over abundance of zucchini and yellow summer squash. A friend if Mom's in Alabama gave her this recipe 20 years ago. It is great for carry in's or family meals. My family loves it. Hope you do also

Ingredients For squash caserole

2 lbfresh yellow squash, zicchini or combination of both

1grated carrot
-
1 smgrated onion
-
8 ozsour cream
-
1 cancream of chicken soup

1 stickmargarine melted

1 pkgherb dressing mix

1/2 tspsalt
How To Make squash caserole

1Slice squash place in sauce pan add water till you can just see it in the squash, add 1/2 t salt. Cover and cook till fork tender. Drain well.

2Grease large casserole dish. Sprinkle 1/2 of package of dry dressing mix in casserole dish.

3Combine all other ingredients and pour over dressing mix. Top with the remainder of the dry dressing mix.

4Bake in 350 oven about 30 min of till bubbly on top.
