Ingredients For spicy hot bbq corn

  • 1 pkg
    taco seasoning mix
  • butter
  • salt and pepper
  • 6
    ears of corn

How To Make spicy hot bbq corn

    In a bowl mix: Taco seasoning mix Half a teaspoon (more or less if you enjoy spicy food!) chili powder (or cayenne pepper!) Dash of salt and pepper.

    Clean the corn by gently peeling back the shucks and removing the cornsilk. Leaving enough only to cover the corn, remove the extra corn shucks. Pull back the shucks and thoroughly wash the corn. Generously spread the corn with butter. Lightly sprinkle the seasoning mixture over corn. Pull one layer of shucks back over corn so that all the corn is covered. This might mean using some of those extra shucks you removed to wrap around the tops of the corn when those still attached are not long enough. You want to make sure there is no corn "exposed" that would quickly burn on the bbq. Wrap each ear in foil and place on the bbq until cooked thoroughly. We put ours around the edge of the grill while we bbq our main course then move directly over the flames for just a few minutes when the main course is almost done. You need to be turning it continually so that it cooks evenly. You can tell when it is done by piercing with a fork. We leave any extra seasoning mix, Tapatio sauce, and the chili powder on the table as a condiments while we enjoy our meal. REMEMBER - Cooking times will vary depending on your bbq! Be sure to check the corn often!
