I've been trying to eat healthier protein meals lately so when I found this recipe I thought it would be great to try it with agave nectar or honey in place of the sugar. You can even substitute the thick sour cream with greek yogurt. You may even choose to spice up the dressing by adding any type of mustard. Keep in mind this recipe is for one. You can always multiply the ingedients as needed. Enjoy!

Ingredients For polish salad

  • 1/4
    head of lettuce, romaine or iceberg
  • 2
    hard boiled eggs
  • 1 c
    thick sour cream or greek yogurt
  • 1 tsp
    sugar or a healthier choice like agave nectar or honey
  • 1 tsp
    lemon juice
  • ground pepper
  • salt

How To Make polish salad

  • 1
    Chop 1/4 head of lettuce to desired size and set aside in a salad bowl.

    In a separate bowl mash the yolk of ONE egg , to that add all of the remaining ingredients except for the remaining eggs. Season to taste.

    Chop the remaining eggs and set aside.

    Pour dressing over lettuce and toss.
  • 5
    Scatter the chopped egg over the salad and serve.
