This is another OLD (saved) great recipe of my dear 91 year old friend Katherine. This recipe is one of her favorites. Hope you enjoy it.

Ingredients For ms katherine's chinese beets

3 can15 oz beets, cut into chunks

1 csugar
-
2 Tbspcornstarch
-
1 cvinegar
-
24whole cloves
-
3 Tbspcatsup
-
3 Tbspcooking oil
-
dash of salt
-
1 tspvanilla extract
-
1 1/2 cbeet juice
-
5 minutes of your time
How To Make ms katherine's chinese beets

1Use a large, shallow pan and dump in sugar and cornstarch, stir and mix well.

2Add: Vinegar, cloves, catsup, oil, salt and vanilla. Again, stir well.

3Open the cans of beets, cut into bite size pieces, add the beet juice (1 1/2 cups, discard the rest). Place into the pan.

4Cook over medium heat 3 minutes, stirring all the time until the mixture thickens. You can store left overs in refrigerator several days. ENJOY
