A friend of mine brought this to a get-together. The minute I tasted it I knew I had to have the recipe. I have brought it to parties several times and am always asked for the recipe. Enjoy!

Ingredients For midwest broccoli salad

  • 8 c
    broccoli florets and some stems
  • 1/2 c
    diced scallions
  • 1/2
    red onion, diced
  • 1 lb
    bacon. cooked crisp and chopped
  • 1 c
    raisins
  • 1 1/2 c
    mayonnaise
  • 1/2 c
    sugar
  • 3 Tbsp
    vinegar
  • 1 c
    cashew pieces

How To Make midwest broccoli salad

    Note: This recipe has to be made the day before serving. Cook Bacon until crisp. Chop and set aside.

    I break up the broccoli the day before since this is the step that takes the longest. I actually do this while watching tv. Break the florets into small pieces and cut the stems small since the broccoli is eaten raw.

    Mix mayo, sugar, vinegar and raisins together. Add to broccoli and scallions. Refrigerate overnight.

    Add nuts and bacon just before serving.
