Back is the early 70s one of my co-workers gave me his recipe. It is fabulous. I found I could use almost an vegetable I had in my garden.

Ingredients For karen's zucchini scallop

  • 1
    zucchini, or summer squash, cut lenghtwise then into quarters
  • 3
    large tomatoes, cut into 8 sections (you can use green tomatoes)
  • 1
    large onion, chopped, you can use any onion, purple, red or green
  • 1/4 lb
    mushrooms
  • 1/4 c
    sugar
  • 1/4 tsp
    oregano, dry or fresh
  • 1/4 tsp
    freshly ground pepper
  • 1/2 tsp
    sea salt
  • butter

How To Make karen's zucchini scallop

  • 1
    Butter a casserole dish. Place onions on bottom and then layer the other vegetables. Sprinkle seasonings on top and dot generously with butter. Bake covered at 350* for 1 hour.
