I know that zucchini is boring. Lots of people grow it and have more than they need and think what the heck am I going to do with all this zucchini. Even your kids will eat this recipe. The flavors are marvelous. This is the time of the year.

Ingredients For italian zucchini skillet

  • 1 md
    zucchini
  • 1 md
    onion
  • 1 lg
    tomato
  • 1 c
    stove top stuffing mix any flavor
  • 1 c
    parmesan cheese
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    oregano or basil
  • 1 c
    parmesan cheese
  • 1 c
    mozzarella

How To Make italian zucchini skillet

    Slice zucchini onion and chop tomato into chunks.

    In a skillet put two teaspoons of oil on low heat and add the veggies. Cook for about 10 minutes on low until the veggies are cooked. Add your spices. Stir and let cook for about 2 minutes.

    There will be lots of liquid in the pan. Add your cup of stove top stuffing and stir till all of the stuffing mix is moist. Let cook for about 2 minutes.

    Sprinkle your parmesan and mozzarella cheese on the top of the mixture and turn the stove off. Let set for about 3 minutes.

    You can use cheddar or gouda or any type you like. I always use freshly grated parm.
