This salad is refreshing and easy to make and great on hot days and always good throughout the summer. My family has always enjoyed this salad at family get togethers and it goes fast. It is also low calorie too.Hope you try it and enjoy it.

Ingredients For eileens sour cream dill cucumber salad

    large cucumbers
  • 1
    medium to large white onion or red onion
  • 1/4 cup
    white vinegar or apple cider vinegar
  • 2 tsps
    salt(i use less)
  • 1 tsp
    black pepper
  • 1 tsp
    dill,dried or you can use fresh(i used dried,its what was on hand)
  • 3 tbsp
    sour cream
  • 2 tsps
    mayonnaise
  • 1 tbsp
    ranch dressing

How To Make eileens sour cream dill cucumber salad

    Have a medium to large bowl set out. wash the cucumbers and then pat dry.

    slice the cucumbers into thin slices. slice white or red onion into rings or dice up and add to the cucumbers. add your salt,pepper and vinegar. Stir up well and chill 2 hours or overnight.

    Take out the chilled cucumbers and onion mixture and drain off,extra fluid can make your salad runny. once drained, add back to your bowl.

    Now add remaining ingredients and mix well. Chill until serving time. Great with Fish,Chicken,Beef or as a side dish. Low calorie too and always re-freshing! Enjoy.
