Years ago, when I was a young mother. I belonged to the women's small group at our church. Every week we would take turns preparing dinner or brunch for each other's families while having bible study. One woman made this, & to my surprise... my young children loved it. Through the years I have modified the recipe to meet my family's changing taste. And it keeps getting better with every alteration. This is the latest! This recipe can be modified for vegetarians. As you will see, I do this often to satisfy my daughter's vegetarian diet. Enjoy! This recipe can be prep. in either oven or crock.

Ingredients For confetti baked beans

  • 1 15 oz
    can kidney beans
  • 1 15 oz
    can butter beans
  • 1 15 oz
    can bush's vegetarian baked beans
  • 1 15 oz
    can green beans
  • 1 lb
    bacon, hickory smoked (optional)
  • 3 clove
    garlic, minced
  • 3/4 c
    brown sugar, firmly packed
  • 1/2 c
    apple cider vinegar
  • 1/2 c
    ketchup
  • 1/3 c
    maple syrup
  • 1/3 c
    extra virgin olive oil (to be used if not using bacon)

How To Make confetti baked beans

    Preheat oven to 350 degrees F If making with bacon, cook bacon in whole strips until crispy. Keep bacon grease to use in next step If making vegetarian style, follow rest of recipe, using olive oil as replacement fot bacon grease. (I use bacon grease even when prepping as a vegetarian dish, my daughter prefers not to eat the meat, but doesn't mind the taste, it's a texture thing!)

    Drain all cans of beans, except baked beans, place in 2 qt casserole dish, mix well. (If cooking in crock pot, place in 2-3 qt crock, and set temp on low while preparing the remainder of dish.)

    Add onion, and garlic to bacon grease over low-medium heat, be careful not to overcook the garlic. Once onions are transparent, drain most of fat, leave about 2 tbsp. In pan for taste. Whisk brown sugar, ketchup, vinegar, & maple syrup into pan with onion mixture. Simmer mixture until cooked through over medium heat. About 20 minutes.

    Pour sauce over beans in casserole dish or crock pot. (Leave bacon set aside until last 10 minutes of baking, or in crock pot.) Bake in preheated oven until bubbly, about an hour and 15 minutes. Or in crock pot , high heat for 2 hours, stirring occasionally. Place bacon atop casserole last 10 minutes of cook time to heat up. Bacon is best if left crispy.
