Always looking for another way to serve corn, this is spicy and cheesy!! Prep time includes roasting the peppers under a low broiler.

Ingredients For cheesy southern corn casserole

  • 6
    ears of corn
  • 1/2 c
    roasted/chopped anaheim pepper
  • 1/2 c
    roasted/chopped red bell pepper
  • 1/4 c
    salsa verde
  • 2 c
    white melting cheese, grated
  • 1 tsp
    mccormicks bacon & chives, opt
  • salt & pepper to taste

How To Make cheesy southern corn casserole

    Remove corn from cob, mix with roasted, chopped peppers, salsa and seasonings and mix together well. Add cheese and mix to combine. Suggestions for cheese would be Monterey Jack or Asadero.

    Bake 350º for 25-30 min.
