Ingredients For bob's stewed eggplant.

  • 1
    egg plant, peeled and cubed
  • 4 to 6 slice
    bacon
  • 1 md
    onion, diced
  • 1/2 c
    diced green bell pepper
  • 1-8oz can
    tomato sauce, italian seasoned
  • 1/4 tsp
    salt and pepper
  • 1/2 tsp
    oregano, dried,thyme,cumin,and curry powder
  • 2
    bay leaves
  • 3/4 tsp
    garlic powder
  • 1/3 c
    sliced pitted olives
  • 2
    celery ribs, diced
  • 8oz
    mushrooms, your choice

How To Make bob's stewed eggplant.

    In a cast iron dutch oven over med heat. Cook bacon till chrisp. Remove with slotted spoon, drain and crumble. Set a side.. In the bacon drippings cook onion,pepper,celery , and mushrooms lightly..Now add eggplant and every thing else,(Except bacon and olives). Cover and cook 30 to 40 minutes or untill eggplant is tender..Uncover,add olives and bacon just befor serving...
