Oh my gosh! Want to make a big hit at your next party or family gathering. Try these. Got this recipe from my daughter. What a great way to have Zucchini for a snack or side dish. I tried these today and they are great. I called my neighbor to come and enjoy them with me. She loved them. You can be sure I will make these again. Maybe I'll try them with Marinara Sause also. They remind me of the "Bloomin Onion" we have here in Pennsylvania.

Ingredients For baked zucchini sticks & sweet onion dip

dip:

1 Tbspbutter
-
1 mdonion, peeled and sliced
-
2 Tbspapple cider vinegar
-
2 Tbsphoney
-
1 Tbspprepared mustard
-
1 cmayonnaise
-
salt and pepper to taste
-
zucchini sticks:
-
3 mdzucchini, unpeeled, cut int 3 inch long sticks
-
1 Tbspsalt
-
1 cof your favorite bread crumbs
-
1/2 cparmesan cheese
-
1 Tbspmixed italian herbs or pizza seasoning mix
-
1/2 cegg substitute, or 3 egg whites or 2 large eggs, lightly beaten
How To Make baked zucchini sticks & sweet onion dip

1Preheat oven to 425.

2Melt butter in a frying pan over medium heat and add sliced onions.

3Cook stirring occasionally until the onions are soften and caramelized.

4Remove onions from the heat and add vinegar.
-
5Place the onions and vinegar into a food processor.
-
6Add the honey and mustard, and process until smooth.
-
7Add mayonnaise and salt and pepper to taste, process to combine all together.

8Makes 1 1/2 cups of dip.

9Pour mixture into a bowl, cover and refrigerate until ready to serve.

10Cut your zucchini into 3 inch sticks and place them in a colander over a bowl and sprinkle on 1 tablespoon of salt.

11Let zucchini drain for an hour or longer; rince and pat dry with papper towels.

12Combine bread crumbs, parmesan cheese and seasoning of choice and set aside.

13Line a baking sheet with parchment paper or non-stick foil and spray it with olive oil.

14Dredge sticks a few at a time in the egg, then roll in brumb mixture.

15Place on prepared baking sheet.

16Place in pre-heated oven and bake for 12 minutes and turn over and bake for an addition 8 minutes or until brown and crisp.

17Remove from oven and serve immediately with the sweet onion dip.
