I found a similar recipe online & this is how I made the peas which came out stunningly delicious.

Ingredients For almost pureed minted peas

  • 12 oz
    fresh, shelled english peas
  • 4 Tbsp
    unsalted butter
  • 1/2 c
    water
  • 2 Tbsp
    fresh mint, cut into chiffonade
  • 2 pinch
    sea salt

How To Make almost pureed minted peas

  • 1
    Bring water & salt to a boil in a small saucepan.
  • 2
    Add butter & peas. Cover & cook about 5 minutes. If peas start getting too soft, shut the heat immediately.
  • 3
    Using a stick blender, puree about 3/4 of the peas. Stir in the mint & check for seasoning. Can be served hot or at room temperature.
