I love hominy, Bubba doesn't. Bubba loves corn, and I don't. We are usually on the same page about everything but that. I learned this recipe when we lived in Arizona when I was cooking at this bar down the road from where we had a cabin.

Ingredients For santa fe corn

4 canwhole kernel corn, (yellow or white or mixed), drained

2 slicecans chopped green chilies

1 tsppepper
-
1 tspcayenne pepper

1/2 tspsalt

1 tspcomino (cumin) ground

2 (8) ozpackages cream cheese
-
1 cwhole milk
-
4 Tbspbutter
How To Make santa fe corn

1Preheat oven to 350 degrees. Grease a large casserole.

2Combine corn, green chilies, peppers, salt, and comino.

3In the top of a double broiler melt cream cheese and butter, adding milk and stirring until smooth.

4mix with the corn mixture and pour into the prepared casserole. Bake for 25 to 30 minutes, or until bubbly.
