I love hominy, Bubba doesn't. Bubba loves corn, and I don't. We are usually on the same page about everything but that. I learned this recipe when we lived in Arizona when I was cooking at this bar down the road from where we had a cabin.

Ingredients For santa fe corn

  • 4 can
    whole kernel corn, (yellow or white or mixed), drained
  • 2 slice
    cans chopped green chilies
  • 1 tsp
    pepper
  • 1 tsp
    cayenne pepper
  • 1/2 tsp
    salt
  • 1 tsp
    comino (cumin) ground
  • 2 (8) oz
    packages cream cheese
  • 1 c
    whole milk
  • 4 Tbsp
    butter

How To Make santa fe corn

  • 1
    Preheat oven to 350 degrees. Grease a large casserole.

    Combine corn, green chilies, peppers, salt, and comino.
  • 3
    In the top of a double broiler melt cream cheese and butter, adding milk and stirring until smooth.
  • 4
    mix with the corn mixture and pour into the prepared casserole. Bake for 25 to 30 minutes, or until bubbly.
