Fresh zucchini is sliced, dredged in seasoned flour, then fried to a crisp golden brown. This is one of those "I bet you can't eat just one" recipes.

Ingredients For fried zucchini

  • 1 md
    zucchini, sliced into 1/4 inch rounds
  • 1 c
    all purpose flour
  • 1 pinch
    salt and pepper, to taste
  • 1 tsp
    crushed red pepper flakes
  • 1 pinch
    onion powder, optional
  • 1 pinch
    garlic powder, optional
  • 1 dash
    paprika, optional
  • 1 lg
    egg
  • 2 Tbsp
    milk
  • olive oil, for frying

How To Make fried zucchini

    In a medium size mixing bowl, mix together flour, salt and pepper, red pepper flakes, and any of the optional seasonings. Set aside

    In another medium size mixing bowl, mix together egg and milk. Mix well.

    Heat oil in skillet over medium heat. Dip zucchini slices into egg wash; using slight pressure, coat with flour mixture, tapping to remove excess.

    Add zucchini to hot oil, taking care not to crowd the pan. Fry 3 to 4 minutes per side, depending on the size of the slices. Note: After frying two batches: drain skillet of accumulated food products and oil. Add fresh oil.

    Drain fried slices on paper towels. Sprinkle with some additional salt and enjoy.
