Having received a nice head of cauliflower from my organic delivery company, I wanted to try something different from my usual cauliflower with cheese. Using what I had on hand, I created this awesome dish! This will be a go-to recipe for future meals, without a doubt! 11-28-14

Ingredients For ellen's creamy bacon-garlic cauliflower

  • 1 md
    head cauliflower, washed and cut into large florets
  • 3 or 4 slice
    bacon, cooked and crumbled
  • 3 Tbsp
    butter, divided
  • 1/4 c
    chopped onion
  • 2 lg
    cloves garlic, minced
  • salt and pepper
  • 2 Tbsp
    all purpose flour
  • 1/2 c
    chicken broth
  • 1/2 c
    milk
  • 1-1/2 c
    kraft with a touch of philadelphia triple cheddar cheese
  • 1/3 c
    fine bread crumbs

How To Make ellen's creamy bacon-garlic cauliflower

    Cook cauliflower, covered, in boiling salted water about 10 minutes or until just tender; drain and set aside.

    In a small skillet melt 1 Tbsp. butter. Add onion and saute until onion is transparent. Add garlic and cook, stirring, about 1 to 2 minutes. Set aside. In a separate skillet, or in the microwave, cook bacon to desired crispness; drain and crumble.

    Melt 2 Tbsp. butter in a medium saucepan over medium heat. Stir in 2 Tbsp. flour until blended. Salt and pepper to taste. Gradually add the chicken broth and milk, whisking constantly until mixture thickens. Add cheese and blend into the sauce.

    Pour cooked cauliflower into a 2-1/2-qt. baking dish. Stir in onion and garlic mixture, bacon, and cheese sauce. Top with bread crumbs.

    Bake in a preheated 350º oven, uncovered, for 25 minutes or until bubbly and bread crumbs are browned. Serve with the meat of your choice or alone as a main dish.
