Ingredients For creole okra

  • 2 lb
    okra, washed and trimmed at the ends
  • 1 Tbsp
    olive oil
  • 1 lg
    onion
  • 1 lg
    green pepper, chopped
  • 1 clove
    garlic
  • 3 lg
    tomatoes, chopped fine, reserve juice
  • salt and pepper to taste
  • 2 Tbsp
    chopped parsley

How To Make creole okra

  • 1
    Brown onion in olive oil. Add chopped green pepper and garlic. Cook for about 10 minutes, or until tender.

    Add chopped tomatoes with reserved juice, salt and pepper. Add okra and simmer slowly for about 20 minutes, or until tender.

    Pour into serving dish, garnish with chopped parsley
