Low carb salad using cauliflower in place of potatoes. To make vegetarian leave out the bacon. This really is better after 24 hours.

Ingredients For cauliflower salad

1cauliflower head, trimmed and cut into bite-size pieces

3/4 cmayonnaise, low fat

1 Tbspmustard

1 tspsalt

pepper to taste

3hard boiled eggs, chopped

1onion, chopped
-
1/4 cdill pickle, chopped

3 slicebacon, crispy cooked and crumbled (optional)
How To Make cauliflower salad

1In a large bowl whisk together the mayonnaise, mustard, salt, and pepper. Add the cauliflower, eggs, onion, dill pickles, and bacon (if using) to the dressing and stir until well coated.

2Cover and refrigerate for 2 to 24 hours. The longer the cauliflower salad chills, the better the flavor.
