Ingredients For pumpkin pie rice pudding

  • 1-1/2 c
    uncooked white rice (minute rice is ok)
  • 1 can
    12oz evaporated milk
  • 1 c
    100% pure pumpkin
  • 1 c
    water
  • 1/2 c
    dark brown sugar, packed
  • 2 tsp
    pumpkin pie spice
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla

How To Make pumpkin pie rice pudding

    Combine rick, milk, pumpkin, water, sugar, pie spice, and salt in medium saucepan. Cook over medium heat 20 minutes , stirring frequently.

    Remove from heat. Stir in vanilla. Let stand for 5-10 minutes.

    Garnish with a dusting of pumpkin pie spice, crushed graham crackers, whipped cream, or pecans, if desired.

    NOTE: Author used Splenda combination of brown sugar and regular sugar. If doing so, cut the sugar from 1/2 cup to 1/4 cup.
