easy mushroom "risotto"

I was trying to find a way to make rice a little less boring, and also sneak in some veggies for the kids.... a few hits and misses, and this yummy side dish was born. Everyone loves it, and it's so easy to make (and ready in just minutes!).

Ingredients For easy mushroom "risotto"

  • 1 can
    cream of mushroom soup
  • 1 can
    water
  • 1/2 c
    mushrooms, fresh or canned
  • 1/2 c
    frozen green peas
  • 1 1/2 c
    instant rice

How To Make easy mushroom "risotto"

  • 1
    Saute mushrooms in a scant amount of oil (or use non-stick spray). Set aside.

    Whisk soup and water together until well blended. Bring to a low boil (too high and it will burn).

    Add mushrooms, frozen peas, and rice. Mix well.
  • 4
    Cover and reduce heat to VERY low for 10 minutes. Fluff with fork and serve.
