I can't wait to make this for the seniors lunch,when,we asked the seniors what their favorite foods.Meatloaf and mashed potatoes came up very often.When we did individual chicken pies they were so happy to have their very own pie,so I know they will love these small meat loaves. You can make your own favorite meatloaf recipe. You can also omit the parsley on top,add grated cheese and place in hot oven just to melt.You can also add vegetables and make mini Shepherds pies.Also,omit the tomato sauce on top and drizzle with brown gravy.

Ingredients For meatloaf muffins with mashed potatoes

  • 1 t. olive oil
  • 1 c finely chopped onion
  • 1 t dried parsley or 1 tablespoon fresh,minced
  • 1 c tomato sauce,divided
  • 1 1/2 lbs ground beef,lean
  • 1 c finely crushed bread crumbs
  • 1 t. worcestershire sauce
  • 2 eggs
  • cooking spray
  • MASHED POTATOES
  • 2 1/2 lbs potatoes,cut in 1/2 inch pieces
  • 2 tablespoons butter
  • 2-4 tablespoons milk or cream
  • salt and black pepper to taste
  • fresh parsley,minced

How To Make meatloaf muffins with mashed potatoes

    Meatloaves: Preheat oven to 350° Combine ingredients using 1/2 cup tomato sauce in a large bowl.Using a 1/3 measuring cup,spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons tomato sauce. Bake for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

    Potatoes: In a large pot add cold water and potatoes and bring to a low boil. Boil for 20 minutes (or until potatoes are cooked through). Remove from heat, drain and return potatoes to cooking pot. Using a potato masher or ricer, mash potatoes until smooth with no lumps.Add butter,salt and pepper to taste.Add just enough milk tomato potatoes creamy . Using a ice cream scoop,place a scoop of potatoes on top of each meatloaf,top with parsley.
