Ingredients For baked potato casserole

  • 8 md
    potatoes (about 2 1/2# total) peeled & cut into 1" cubes
  • 1 c
    evaporated milk
  • 1/2 c
    sour cream, lite
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 2 c
    shredded cheddar cheese (divided)
  • 6 slice
    cooked & crumbled bacon (divided)
  • sliced green onion (optional)

How To Make baked potato casserole

    Place potatoes in a lg. saucepan. Cover with water and bring to a boil. Cook over medium-high heat for 15 to 20 min. or until tender, drain.

    Preheat oven to 350 degrees. Grease a 3 qt. casserole dish.

    Return potatoes to saucepan, add evaporated milk, sour cream, salt & pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups of cheese and half of the bacon. Spoon mixture into prepared casserole dish.

    Bake for 25 to 30 min. or until heated though. Top with remaining cheese, bacon and green onion. Bake for additional 3 miin. or until cheese is melted.
