spinach squares (or rounds)

When I was growing up, my mom couldn't get me to eat spinach. She made these spinach squares and I became a lover of spinach. These are great for pot luck situations or just a family dinner at home. You can make little personal sized spinach rounds. Just spray a muffin pan and fill about halfway with the mixture and bake as you would the regular casserole. Serve as a side dish or as an appetizer.

Ingredients For spinach squares (or rounds)

  • 3 Tbsp
    butter or margarine
  • 1 sm
    onion, chopped
  • 1/4 lb
    fresh sliced mushrooms
  • 4
    eggs
  • 1/4 c
    fine dry bread crumbs
  • 1 can
    condensed cream of chicken soup
  • 1/4 c
    grated or shredded parmesan cheese
  • 1/4 tsp
    pepper
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    dried oregano
  • 2
    10 oz. packages frozen spinach, thawed and squeezed as dry as possible

How To Make spinach squares (or rounds)

    Melt butter in a large frying pan over medium heat. Add onion and mushrooms and cook, stirring often, until vegetables are soft. Remove from heat.

    In a large bowl, lightly beat eggs.

    Stir in onion mixture, crumbs, soup, 2 tablespoons of the cheese, pepper, basil, oregano, and spinach.

    Pour into a greased 9-inch square baking pan. Sprinkle with remaining 2 tablespoons cheese.

    Bake at 325 degrees until edges are golden brown (about 35 minutes).

    Cut into squares and serve hot.
