A classic cajun side dish, dirty rice can be eaten by as a main course, paired with your favorite cajun recipe or even with a nicely grilled pork chop or steak.

Ingredients For dirty rice

  • 2 c
    enriched rice
  • 4 c
    chicken stock
  • 4 clove
    garlic, minced
  • 1 1/2 c
    white onion, diced
  • 1 c
    green pepper, diced
  • 2 Tbsp
    vegetable oil
  • salt and freshly ground pepper for seasoning
  • 1 tsp
    dried thyme
  • 1
    bay leafe
  • 1/4 tsp
    cayenne pepper (or more for chili-heads)
  • 1/4 lb
    pork sausage
  • 1/4 lb
    ground beef
  • 1/2 lb
    chicken giblets (substitute cubed chicken if opposed to giblets)
  • 1 bunch
    green onions, chopped

How To Make dirty rice

    In colander, rinse rice several times until water runs clear. Place rice in pot and add chicken stock. Bring to a boil and cover and simmer for 20 mins.

    Saute garlic, onions, peppers in vegetable oil until soft. Season with salt, pepper, thyme, bay leaf and cayenne pepper and add to rice.

    Cook sausage and beef together and add to rice.

    In separate pot place giblets, cover with water and simmer for 30 minutes with green onions, salt and pepper. Let cool enough to chop into small dice then add to rice mixture.

    Mix rice well and let simmer on lowest heat for additional 30 minutes stirring often. If mixture begins to get dry add additional chicken stock or water.
