This potato side dish is a different and refreshing substitute to mashed potatoes or other side dishes. It is a bit zesty and is made with very little oil.

Ingredients For roasted new potatoes side dish

1/4 colive oil

1and 1/2 lbnew,small, red or white potatoes

1 tspsalt

1 tspcayenne pepper
-
1 Tbspdill weed

1 tspgallic powder
How To Make roasted new potatoes side dish

1Scrub and boil potatoes for 10 minutes.

2Pour potatoes in a colander, rinse with cold water, let stand until warm to touch. Either pill or use with pills on. Cut small potatoes in half and larger ones in fourth.

3Mix all dry ingredients and set aside. Mix potatoes and the oil in a bowl, add dry ingredients and toss, spread on a cookie sheet.

4Heat oven to 350, brown one side for about 15 minutes, turn potatoes over with a spatula and do the same with the other side. Delicious and pretty side dish.
