The cheese in this really enhances the flavor of the potatoes. Sometimes I don't bother to peel the potatoes. It not only saves time and effort, but it adds a bit of texture and nutrition.

Ingredients For rich mashed potatoes

  • 3 1/2 lb
    potatoes, peeled
  • 1 c
    cheddar cheese, shredded
  • 1/2 c
    butter
  • 1 tsp
    garlic powder
  • 2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 1/2 c
    sour cream
  • chives, chopped

How To Make rich mashed potatoes

  • 1
    Cook potatoes in water to cover 25 -30 minutes until tender.

    While still hot, mash roughly with potato masher and add cheese. Continue to mash until cheese is well incorporated.

    Mash in butter, garlic powder, salt, and pepper.

    Finally, add sour cream and mash or whip. If you desire your potatoes a bit thinner, add cream or milk until desired consistency. Reheat if necessary.

    Serve with extra butter and a generous sprinkling of chives.
