Ingredients For potato breads

5 cmashed potatoes, warmed slightly

1 - 1 1/2 call purpose flour

1/2 cbutter, room temperature

salt
How To Make potato breads

1Preheat oven to lowest setting (usually 200 degrees F.). In bowl, combine potatoes with 3/4 C flour & 1/4 C butter. Use your hands or a spoon to blend ingredients.

2While mixture is still a little sticky, turn it out onto lightly floured surface. Add 1/2 C flour & using your hands, work it into the mixture. When it is no longer sticky & dough has formed, knead lightly a few times. Use a little more of the remaining flour to dust work surface, then roll out dough to about 1/2" thickness (divide dough in 1/2 or 1/3 if too large for work surface). Cut dough into small circles, squares or triangles.

3Heat griddle over medium low heat; add a little of remaining butter. Fry pieces in batches, turning once or twice, until golden brown on both sides, 2 - 3 minutes per side. Repeat with remaining dough, adding more butter as necessary.

4Keep warm in oven until all bread has been fried. Serve hot topped with butter & sprinkled with salt.
